Spoon pie filling into a greased 13" x 9" x 2" baking dish. In a bowl, beat eggs, milk and vanilla. Dip bread slices in egg mixture for 1 minute. Arrange 2 rows of bread on top of the pie filling, overlapping slices slightly. Brush bread with melted butter. Sprinkle with sugar and cinnamon. Bake, uncovered, at 350* for 30-35 minutes or until lightly browned. Serve fruit side up. Yield: 4-6 servings.

Heat potato water (or water and milk) until quite warm. Add oil (or shortening) and yeast and let dissolve. Combine flour, sugar, and salt in large bowl. Add liquid mixture and beat well. Then add 4 or 5 cups of flour to form a soft dough. Knead well. Add a little more flour if dough still sticks to hands and knead again until dough is smooth and elastic. Cover dough and let rise in warm place until doubled. Punch down and shape into 2 loaves. Place loaves in greased pans. Grease tops of loaves with shortening or butter. Let rise in warm place until doubled. Bake at 375F for 10 minutes. Decrease heat to 350F and finish baking another 20 minutes.
